Long time, no see, friends! Life has been super hectic lately so I haven't had time to post, but I'm back! With a yummy recipie too!
I made this last Monday for dinner and it was so quick, easy, &
d e l i c i o u s.
Here's what you need;
Ground turkey meat (16 oz)
1 box of bow tie pasta (I use Barilla)
1 can of corn
1 can of black beans (drained & washed)
1 packet of low-sodium taco seasoning
1 cup Cilantro
2 limes
1 cup of cheese
Salt to taste
Directions:
Start boiling the water for the pasta and cooking the ground turkey. While the pasta and turkey are cooking start cutting your cilantro and limes. Also drain the corn and drain & rense the black beans.
{Side Note}
Blake and I love, love, love cilantro! So if a cup is too much for you, you can always just add however much you want. We are just a little cilantro crazy :)
Once the turkey is done add the taco seasoning as says on the packet. (I also add a few sprinkles of Mr. Dash fiesta lime seasoning)
When your pasta is done drain it, transfer to a large bowl and squeeze the lime juice on the pasta. Add your ground turkey and mix. Then add the corn and back beans and mix again. Lastly add your cilantro and cheese and mix one more time and you're finished!
Super easy right?? Just wait till you take a bite. So yummy!(I think it's even better heated up the next day!)
